What are things I might want to pack and what might be some cool things to do in Denver

What season are you going in? That makes a big difference as to what you should pack. There’s a lot of outdoor malls etc. in the Denver area so be sure to bring something warm if you’re going in fall, winter or spring. (It’s most likely going to be nice weather for you, but I’ve seen it snow in September and the first week of June in Denver.)
If you’re going in spring, summer, or fall then a trip to Elitch Gardens amusement park is a must. There’s a nice zoo and aquarium that are open year-round in Denver. There’s an art museum, Colorado History Museum as well as the Denver museum of Nature & Science. There’s the Denver center for performing arts where they always have shows. There’s the ESPN zone on the 16th St. mall which is cool.
I’d say check the Denver RTD bus website where you can input your destination and they’ll plan your route. That way you could even see Boulder, CO which is in the foothills and has good shopping on Pearl St. Mall.
